Former Surrey batsman Evans reached stumps on 85 not out to help the hosts recover from losing three wickets in the space of 20 runs in the afternoon session of an attritional first day in the fixture.
Ian Westwood weighed in with 68, combining in a third-wicket stand worth 89 to help steady the reigning Division One champions after they had found it tough going in the morning.
They laboured to 54-2 in the 31 overs before lunch, skipper Varun Chopra (10) the first man to depart when he edged seamer Luke Fletcher to Samit Patel at second slip.
Andre Adams then dismissed William Porterfield, also for 10, during a superb opening spell that saw him concede just seven runs from his eight overs.
Westwood made the most of being dropped twice in the slips off Ajmal Shahzad to reach his half-century, only to then drill the first delivery in a new spell by Patel to mid-on when seemingly well-set.
Tim Ambrose eased his way to 39 only to be caught down the leg side off the bowling of Adams, who also removed Rikki Clarke for a duck to finish the day with impressive figures of 3-49.
In between Chris Woakes became Patel's second victim, bowled attempting to cut the left-arm spinner on 14 having already hit two fours and a six.
At that stage Warwickshire were wobbling at 213-6, but Evans - who joined the Bears in 2010 - and Ateeq Javid (eight not out) saw them through to the end of play without any further losses.
