Van Gerwen edged a tight encounter to defeat Taylor 6-5 - his first defeat of the 15-time world champion in a final.
The triumph follows last week's victory over the world number one in the Grand Slam of Darts, although the Stoke star played his part in a thrilling contest.
Following wins over Gareth Pass, Shaun Griffiths, Wayne Jones, Mervyn King and Connie Finnan, van Gerwen booked his spot in the final with a convincing 6-2 success over reigning world champion Adrian Lewis in the semis.
In the final itself, the Dutchman won the first leg only to see Taylor level with an 11-darter, but then reeled off three consecutive legs to pull out to a 4-1 lead.
But Taylor hit back in fine style, a 14-darter and checkouts of 92 and 121 seeing him get back on terms.
Taylor's surge continued as he finished 90 on the bull to break again and lead 5-4, only for van Gerwen to take out 164 with two treble 19s and the bullseye to force a deciding leg.
Taylor scored 140 and 177 as he was first to a finish, but he missed the bull to take out 88 and van Gerwen stepped in with a 124 checkout on double 11 to claim the title.
Van Gerwen ended the final with a 109.90 average to Taylor's 108.82, and the £6,000 prize money sees him move up to a career-high seventh in the PDC Order of Merit.
