Didier Drogba's fortuitous goal gave Jose Mourinho's side the three points at Stamford Bridge, but The Gunners were unhappy about a couple of massive decisions from the officials.
Arsenal believe Drogba was offside for Chelsea's goal, while Cole claimed a penalty when being brought down by Claude Makelele in the Chelsea box.
"These things are killing teams," said Cole.
"I said [to referee Graham Poll] that it was a penalty and I thought it was a penalty. Claude said nothing. I think everyone knew it was a penalty apart from the referee.
"It's hard when these kind of things happen as they can turn a game. If we'd got the penalty and scored, it would have given us a good chance and we would maybe have gone on and won the game.
"As for their goal, I don't want to get into trouble for what I say. I haven't seen the replay, although I've heard what other people have said.
"It's not the first time that it's happened to us and again we told the referee and linesman but they missed it. We're disappointed in those decisions and other decisions, but there's nothing we can do."
Cole refused to lay any blame for Chelsea's goal on 21-year-old defender Philippe Senderos, who he believes is a big talent.
"Philippe has done marvellously when he's come in. If their goal was offside, we can't blame him as he's held a good line.
"But he's a strong lad, he's brilliant around the park and very upbeat. He might be down now but he'll be refocused for the next game."
Arsenal take on Fulham on Wednesday and Cole believes they can bounce back from their defeat at Chelsea.
"Of course, if we'd have won, we'd have had a lot of confidence going into the season and they'll have a lot of confidence now.
"But we've just got to keep going, working hard as a team and training well, and hopefully we can get the results.
"There's still a long way to go. Of course, it's always nice to beat the other big clubs but we've got to be focused for Wednesday's game and if we get a good result, everyone will be buzzing again."
