Kitson has not played for the club since the opening day of the season after originally suffering knee ligament damage.
He then picked up a hamstring complaint before requiring emergency surgery to remove his appendix.
The forward was due to be on the bench for Reading's FA Cup tie with Burnley on Saturday, prior to the game's postponement.
Kitson should figure for the first team shortly, but Coppell feels some of the player's fitness problems are due to his attitude towards training.
"There's no hiding from the fact Dave's been fragile in a physical sense," said Coppell.
"He's never had a really concerted run of games without being injured and there's no way we're going to gamble with his fitness at this stage.
"Dave isn't a very good trainer. He's far better when he's playing in an actual game.
"These days players realise the value of their own fitness. You have to be supremely fit to withstand the rigours of modern-day football.
"But Dave has more of an older attitude towards training which he's got to change."
