Griffin claims that Summerbee caught him in the face after 74 minutes of the Black Cats` 1-0 win at Kingston Park.
The players came together as they tussled for a bouncing ball and, as it was cleared, the 21-year-old defender was left on the ground holding his face.
"Nicky Summerbee deliberately elbowed me," said Griffin. "I thought he would have learned his lesson after that incident with Ben Thatcher, but he elbowed me and he knows it.
"It was a Derby game and we'd been having a typical battle, and then he's gone and elbowed me," Griffin told the Sunderland Echo.
"It took me by surprise, if you get an elbow in the nose it's not nice, is it?"
The 29-year-old was immediately substituted after the incident and walked straight back to the dressing room without watching the rest of the game, but the referee took no action against him.
"I was frustrated the referee did not see what happened," added Griffin. "Because I always thought the rules stated that if you raised your hands you got a red card."
