The Canadian put pen-to-paper on a two-year deal at Pride Park on Friday, with youngster Izale McLeod moving on loan in the opposite direction.
Peschisolido was out of contract with The Blades this summer, although manager Neil Warnock had hoped he would sign a one-year extension.
"We are sorry to lose Paul but since before Christmas he has indicated that travelling three, sometimes four hours per day for training has been getting to him," said Warnock to the club's official website.
"And, although we offered him a new contract, his move to Derby was clearly not just for financial reasons.
"He was approached by Coventry a few weeks ago, which I think made him realise that at 32 years of age, it would be nice to be at a club closer to home for family reasons."
The 32-year-old striker had scored nine times in 12 starts for the Yorkshire outfit along with netting their winning goal in their FA Cup victory over Colchester.
The clubs have agreed terms on the deal that sees both players ineligible to face their former teams when they play each other on March 23.
