The Icelandic striker's deal had been due to expire at the end of the season but he has opted to prolong his stay at Vicarage Road.
The 25-year-old joined The Hornets in the autumn of 2000 and has established himself as a key component of the team.
Helguson is top scorer for the First Division outfit this term and Ray Lewington was delighted the marksman had penned a fresh deal.
"I am very, very pleased," Lewington told the club's official website.
"Heidar has done really well for us this season and he is a great bloke to have around the place. His enthusiasm is infectious."
