Ade Akinbiyi's second half brace helped Stoke to the valuable three points and come from behind to claim victory.
Icelandic star Heidar Helguson put Watford ahead after just four minutes when he converted from close range after brilliant work from Paul Devlin down the right.
Stoke were level, though, within ten minutes when on-loan defender Gerry Taggart levelled.
The former Northern Irish international rose highest when John Eustace floated in a free kick.
Akinbiyi then grabbed his first just after half time when he swept home from Darel Russell's pull back.
The former Leicester City star grabbed his second and Stoke's third on 71 minutes when he drilled the ball home from the edge of the six-yard box.
Stoke then held on with ease, but their win was marred by the last minute dismissal of defender John Halls - who was red carded after reacting badly to a challenge from Helguson.
The Potters have now climbed four places in the table, while Watford continue to titter on the brink of the relegation zone.
