Fryatt gave Walsall the perfect start as he headed in a Paul Merson corner after just 74 seconds and the Midlands team had threatened a goal even earlier when Neil Emblen forced Andy Lonergan into a flying save.
Preston wasted a chance to level on the half-hour mark when Richard Cresswell blazed over after Claude Davis set him up.
Graham Alexander and Paul McKenna then went close and the latter also had a goal disallowed before Preston equalised eight minutes into the second half. Matt Carbon fouled Cresswell and Alexander beat James Walker from the penalty spot.
But Walsall took the lead for the second team when Merson picked out Wright and the midfielder headed past Lonergan.
Preston responded and were unlucky not to take a point. Walker saved from Alexander, Cresswell and Simon Lynch hit the woodwork and Cresswell had an effort cleared off the line, but Walsall held on to take the points.
