The 18-year-old has been rewarded with the long-term deal after breaking into the Saints' first-team picture this season.
Gallagher made his debut as a late substitute in the 2-1 Capital One Cup defeat at Sunderland on November 6.
He has since gone on to feature in 19 games for Southampton so far this season, starting three Premier League games and making a further 14 top-flight appearances from the bench.
His first goal came in the 2-0 FA Cup victory over Yeovil in January and he also netted in the 4-2 Premier League win over Norwich in March.
Gallagher told his club's official website: "It's been a big year for me and this just tops it off, really. I'm very happy and very proud. I won't forget this day.
"This is a bit different from signing your first professional contract - everyone talks about this contract being a lot harder to get, so I'm very, very happy.
"This time last year I'd have never really thought I'd be getting this contract yet. I thought I'd have to battle it out to get one, but this gives me that bit of security so I know that, if I can keep going, the club will repay me.
"Now it'll be good to see how I push on next season. I'm looking forward to pre-season because it's my first one with the first team."
