Mark Hughes' side made it three wins on the bounce after Odemwingie latched onto a stray Ahmed Elmohamady pass to score on 62 minutes.
Earlier, Asmir Begovic produced good saves to keep the Potters in it and Odemwingie was delighted to win and reach the magic 40 points mark with six games still to go.
He told Sky Sports: "Very pleased (with the win), maybe not with the performance but there's another side of our game which we can be proud of.
"We had to dig deep really, first half maybe didn't create enough, but as I say we had to show commitment today.
"We knew it was going to be a difficult one because things are going so well but we are pleased with the result."
The Stoke striker fired in from the edge of the box to register his fourth goal in three games, and fifth since joining the Potters from Cardiff in January.
He added: "Everything was just instinctively - I got to the shooting position, had a shot and glad it went in. But I'm enjoying my football here - my team-mates are brilliant with me so I hope we keep going like that until the end of the season."
The Potters have now lost only one of their last nine matches - winning four of their last five - to sit 10th in the table as they seek to finish in the top half of the Premier League for the first time.
Odemwingie said they are going to have to work really hard to achieve this, adding: "Today we really struggled so the manager emphasised on the attitude before the game because he knew it was going to be one of those difficult days but we are very pleased we came out of with the three points."
