The Australian defender has come through the ranks at Elland Road and was expected to make the breakthrough into the first team over the next few seasons.
Leeds had offered a new one-year contract to the 20-year-old, whose current deal expires this week, but he has now decided to turn his back on England and make the move to Denmark.
"I'm very excited about AGF and I look forward to it," said Cansdell-Sheriff.
"Hopefully I can gather some experience in the first team. Manager Poul Hansen has told me about the team, and he has huge expectations for the coming season."
Aarhus director Frank Heskjaer has welcomed the signing, telling the club's official site: "We have watched him in 10-12 games, and I'm convinced Shane will strengthen the team immediately."
