The experienced Boertien has been looking for a new club since being let go by The Rams at the end of last season.
He has trained with Leeds and Oldham this summer but has agreed a one-year deal with The Saddlers after impressing manager Richard Money on trial.
"We are going to need to be more flexible and adaptable this season and I am delighted to have a player of Paul's calibre on board," said Money.
"His arrival gives us extra strength in depth and versatility.
"He has played most of his career at Premiership and Championship level and we are satisfied he is over his injury worries of recent times."
Sonko has also signed a one-year contract and Money is delighted to bring him in.
"Edrissa is already a very popular member of the group," he said.
"He is the sort of player I like because he can play, pass and move."
Sonko played for Eredivisie side Roda JC for seven years before moving to Xanthi of Greece last winter.
As well as being equally comfortable on either flank he can also play in central midfield or up front.
Money enthused: "He is a player of obvious talent who gives us versatility as he has played on the left and right during his time in Holland and in the centre of midfield for his country.
"I hope the supporters give him a chance to settle down and show what he can do."
