Both player and club have failed to agree terms, as the veteran was due to sign a pre-contract agreement on a two-year deal with The Tigers.
McDermott will remain with The Mariners for the moment but the 34-year-old has been attracting the interest of several other clubs.
"At the end of the day, it wasn't what I wanted and it wasn't right for the club or me," said McDermott.
"I'll just keep my options open and it's still possible that I'll sign for Grimsby Town.
"But we'll see what's offered and what happens."
Meanwhile, Scunthorpe United manager Brian Laws is resigned to losing defender Andy Dawson, with The Tigers seemingly poised to snap up the player.
"Andy has now spoken to me and indicated what is going to happen this summer," said Laws.
"Obviously, I will be sorry to lose him because he has been a great asset to this club."
