Forest boss Paul Hart has taken the decision not to renew their deals at the City Ground after losing out to Sheffield United last week.
The duo's contracts expire on June 30, and the Midlanders have decided to let the pair go with immediate effect.
Hart admitted that it had been a tough choice to release the players, but insisted it had been taken in the club's best interests.
"Difficult decisions have to be made sometimes and this is one of those occasions," he said.
Lester had made over 100 appearances for Forest since joining from Grimsby in February 2000, while Hjelde made exactly 150 starts after joining from Rosenborg in 1997.
