The highly-rated 18-year-old (pictured) has been handed a three-year deal - his first ever professional deal.
"Gaby's done a very good job this year and put that with what he did last season, he thoroughly deserves a long-term contract," O's boss Martin Ling told the club's website.
"We were considering leaving him a scholar until his scheme expired in the summer, but his progress has been that good that this was the right move to make at the right time.
"He's a good solid defender - his distribution has come on a lot this season, but his big attributes are his pace, power and heading ability.
"He will have to continue the hard work - we've had enough young players rewarded with contracts in recent years who have not gone on to better things and we don't want Gaby to join that list."
