The centre half had been offered a three-year contract buy U's boss John Beck, but has opted instead to sign a two-year deal with Barry Fry's Posh.
Beck had already stated that he saw Joseph as one of half-a-dozen players that would form the nucleus of the Cambridge team for next season and this revelation will come as a bitter blow to his plans.
U's chairman Reg Smart is furious about the situation and blamed former manager Roy McFarland for allowing the 25-year-old's contract to expire.
"I talked to Roy about it, but the truth was that he didn't rate Marc very highly, and you have to back your manager's judgment," he bemoaned.
"I don't believe the money offered by Peterborough would be very much more than he would get with us, and I don't think it's a good move for the boy because since John Beck has arrived he's brought the best out of him.
Joseph is currently enjoying his last week with the club on a players' holiday in Cyprus.
