The former Dundee United forward bagged his 17th goal of the season after just 100 seconds, to make it seven games in a row in which he has found the net.
And McCoist said: "It's an amazing achievement. It doesn't matter the league or the opposition, because that record is fantastic.
"We are playing sides who make it very, very difficult for you.
"That Arbroath team got a draw at Celtic Park, only lost the replay 1-0, and played really well for 75 minutes at Ibrox this year.
"So these are tough places to come, no matter what people think.
"For Jon to continue that scoring rate, scoring in consecutive games, is a terrific achievement.
"I don't think I had a run like that. I did get one or two more than him, right enough, but I can't remember scoring in seven straight games."
Not clinical enough
McCoist was also happy with his team's overall display, although he felt they should have scored more goals.
"I was really thrilled with the start," he said. "For 45 minutes we were excellent, and I was pleased with the whole 90 minutes.
"I didn't think we were clinical enough in the first half, funnily enough, and we certainly weren't clinical enough in the second half. We have to improve on that.
"But you've got to be delighted because we played some great football and created a lot of chances."
Arbroath boss Paul Sheerin said: "We set up with a system to stay in the game as long as possible, so it was a blow to lose one so early, especially from a set-piece.
"We let ourselves down in the first half to be honest but there was an improvement in the second half.
"The game petered out a bit but we didn't concede in the second half, so it could have been worse."
