Jeremy Menez and Wilson Oruma have been linked with moves away from Sochaux in recent weeks.
Lyon are believed to be keen on Menez, while Marseille are rumoured to be interested in Oruma.
Plessis has admitted there has been a great deal of interest in Menez with Manchester United and Arsenal enquiring about him in the past, but Sochaux hope to tie him down to a new long-term deal.
"Last season, I was contacted by Arsene Wenger and Alex Ferguson about Jeremy," Plessis told L'Equipe.
"This season, I know clubs are coming very often to see him.
"Some agents contact me to tell me some clubs have been attracted. But he won't leave.
"He has a career path. He doesn't want to cut corners. He has not terminated his education yet. Money is not everything.
"We do our best to not be plundered. I am not worried, but I remain cautious."
Plessis revealed they have offered Oruma a new deal with his current deal due to expire at the end of the season.
"I met l'OM general manager Pape Diouf but I can assert you we have not talked about Wilson Oruma," added Plessis.
"His situation is simple, he will be a free agent in June. We have proposed him a two or three year contract extension.
"He has almost agreed, but his agent Pierre Frelot prefers to wait a little.
"One thing is for sure, we don't want to let him leave now. I am not sure he will leave in June, at the moment it is 50-50.
"About Jeremy Mathieu, we also proposed him a contract extension, but I can understand Mathieu wants to experience something else and play in the Champions League."
