However, Aimar came on for the final 16 minutes in Valencia's 2-0 win over Racing Santander on Saturday, and Rufete has made a rapid recovery from his problem which was expected to keep him out for at least another week.
Aimar - who was linked with a multi-million pound move to England last week - has stated his desire to feature in the encounter with the Gunners, but is likely to start the game on the bench.
"We are playing a lot of games at the moment, and I want to help the team," said the Argentine international.
"I believe that after the training sessions of the last few days I am fit enough for the game in London.
"We will go there with the idea of winning the game."
Although Benitez is playing his cards close to his chest regarding team selection, the Valencia coach is expected to start with Ruben Baraja, David Albelda, Miguel Angulo, and Vicente in midfield.
This would suggest that both Aimar and Rufete will be named amongst the Spanish champion's substitutes.
Argentine Kily Gonzalez will definitely miss the clash after recently suffering a broken leg.
