The 23-year-old, who is a full Uruguayan international, becomes The Che's first capture of the close season.
Cannobio has put pen-to-paper on a three-year deal, and revealed he had fulfilled his ambition by moving to the Mestalla.
"I have now completed my dream of playing in Europe," stated Cannobio.
"I want to thank the club because it's a big one. It has a great history and has trusted me. They can be calm because I will do my best for my new team and I will not let them down.
"I will work hard at Valencia and help them in any way I can. There is a great squad here and good players that will help me to adapt.
"I want to see the team in first place and the supporters leave the stadium satisfied after each match.
"I know all my new team-mates because I have seen them on television and that's why I can say that Valencia has a great team - I want to play with all of them."
However, controversy surrounds the transfer as Valencia boss, Rafa Benitez (pictured) - who is in Switzerland with the rest of the playing squad - claims he knows nothing of the player and was not consulted on his signing.
