The 25-year-old picked up the knock after colliding with Juventus striker Marcelo Zalayeta in last week's Coppa Italia clash, and is likely to be out for the rest of the season.
Frey travelled to Strasbourg for the operation, where doctors attempted to rebuild his damaged ligaments.
The club has now announced that the shot-stopper will stay in hospital for a week, before slowly starting his rehabilitation.
Coach Cesare Prandelli is still desperately looking into the transfer market for a possible replacement, with Inter's Italian keeper Francesco Toldo a strong candidate to come in.
Both Inter and Fiorentina are weighing up the option of exchanging Toldo for striker Valeri Bojinov.
