The 38-year-old coach had been out of work since being sacked by Olympiakos in January, when the club were sitting 10 points clear at the top of the Greek Super League.
He will take over from Jesualdo Ferreira, who confirmed on Sunday his intention to step down from his role at the end of the season.
Jardim will be charged with the difficult task of reviving Sporting's fortunes after the club finished in seventh place in the Portuguese League - their worst ever placing.
The Portuguese coach will not be able to count on the services of Dutch striker Ricky van Wolfswinkel, who has agreed to join Norwich.
