The Wales international, who spent last season with the Salford Red Devils, had already joined the Warriors backroom team to help develop young talent in Wales but will now take up a playing contract.
It is the second spell the 33-year-old has spent with Wigan having made six appearances in the 2006 season.
Head coach Shaun Wane said: "Jordan has been training pre-season with us and has really impressed with his fitness and desire to continue playing at the highest level.
"Jordan was a stand-out performer at Salford last season and led Wales from the front in the 2013 World Cup as captain. He will add quality and experience to our squad and we are pleased to have him join us.
"Within days of him joining Wigan as a coach, I sensed that he had more to offer. After discussing the opportunity of him playing for us with Kris Radlinski, I was convinced he could do a job for us for a season."
"There is an element of romance attached to a player finishing his career with Wigan in a similar way that Paul Deacon did with us before moving on to coaching," added chairman Ian Lenagan. "We believe that it will be a great story for Jordan."
Jordan will be given squad number 28 and is likely to make his first on Sunday in Paul Prescott's Testimonial game at Workington Town.
