The 28-year-old Anderson has featured in 11 of the Wildcats' 13 Super League matches this season after joining on a 12-month deal in the winter and has now extended that arrangement to run until the end of 2016.
"It's been pretty short negotiations because I'm really enjoying myself here at Wakefield so I'm excited," said the former Melbourne and Brisbane forward.
"It was a little bit of a slow start because I didn't have a pre-season under my belt but getting a few games and getting the game time I think I'm starting to show some good football."
Wakefield coach Richard Agar said: "Scott's had a promising start for us and been pretty consistent throughout. He's a tough kid and we think he'll get better."
Meanwhile, 30-year-old winger Fox has left by mutual consent and is expected to join Championship club Halifax.
Fox has scored 45 tries in 84 Super League appearances for Wakefield but was out of contract at the end of the year and has departed.
Agar said: "We'd decided that we wouldn't be re-signing Peter for next year and for a player of his experience, we'd give him the opportunity to look elsewhere with the view to him bagging a contract for next year.
"We really thank him for his efforts. The part he's played since I've been here in building the club back up, he played a big part in that on the field and off the field. We really wish him well in his new venture."
