The prop has been sidelined since suffering a stress fracture however he is now back to full fitness.
The inclusion of Greyling is one of four changes made by coach Frans Ludeke following the rout of the Kings last time out.
Bjorn Basson, Dewald Potgieter and Werner Kruger also start, while there are places on the bench for Francois Hougaard, Wilhelm Steenkamp and Willie Wepener.
The Waratahs have made just one change to their match-day 22 for the trip to Pretoria.
With Toulon-bound Drew Mitchell sidelined with a hamstring injury suffered in the 25-20 win over the Chiefs, Tom Kingston comes straight back in to the starting XV.
Peter Betham, who had been vying for the No 11 shirt with Mitchell this season, remains on the bench.

What they said...
Bulls coach Frans Ludeke
"We finally played the rugby we wanted last weekend and the challenge will be to back it up against the Waratahs.
"They are dangerous opponents and at this level the margins are very small, so we cannot afford to play at any level other than our best."
