The 58-year-old former Wales international rugby league and rugby union player was with Doncaster until June 2007 prior to moving to the Worcester Warriors.
Griffiths brings a wealth of experience to Castle Park having also worked for London Welsh, Swansea and the Newport Gwent Dragons along with being part of the Wales rugby union coaching staff.
The Knights' existing coach staff of Brett Davey, Glen Kenworthy, Dougie Flockhart and Tom Luke will remain unchanged and Griffiths is predicting a bright future for the club.
"I am delighted to be back at Doncaster, I enjoyed my last tenure here before it was cut short too early," he told the club's official website.
"Everything I love about the club is still here and the future is still very bright. I am looking forward to building on the foundations of what the current management have put in place which looks very exciting.
"Our main focus as a Club is to get Doncaster Knights on the rise up the table."
