The Hollywood actor shot to fame three years ago on the back of the hit comedy, in which he played the role of McLovin.
Just 17-years-old at the time, Mintz-Plasse admitted he was shocked by the reaction he got from the stunning actress when the pair bumped into each other shortly after the film was released in 2007.
"I was more excited about meeting her, but I held it in!" he explained. "I wanted to be professional in front of her!
"She was a big fan of Superbad when it came out and I was in awe. She gave me a huge hug and I didn't sleep for weeks after that!"
Audition
It's unlikely the 20-year-old could ever have imagined he would be one of the most sought after actors in Hollywood when he went along to an open audition for the part of McLovin just three years ago.
An even fresher faced Mintz-Plasse turned up with with minimal acting experience behind him, but landed the part after the producers failed to fill the role from over 500 "proper" actors.
Since then he has added the brilliant Role Models and Year One to his CV, starring alongside the likes of Jack Black, Seann William Scott, Paul Rudd and Michael Cera.
His latest big-screen effort comes in the comic book movie Kick-Ass and he told Helen and Max what it was all about:
"It's about Dave Lizewski, who's just a regular kid and he doesn't understand why people want to be like Paris Hilton and no one wants to be like Spiderman," he explained.
"So he gets a costume, dresses up and goes and fights crime and gets his ass kicked!"
Too funny
Mintz-Plasse in fact auditioned for the role of Lizewski, but lost out to English actor Aaron Johnson.
The Boston Celtic's fan was 'too funny' for the lead according to director Matthew Vaughn and was instead given the part of Lizewski's nemesis, Red Mist.
"I auditioned for the lead of Kick-Ass, and the director hated my audition!" he joked.
"No I'm just kidding. He gave me the role of Red Mist right there and then. I'm too loud and obnoxious for the lead, so he gave me the role of Red Mist."
He might not have landed the lead role, but at least his character got to drive around in a $200,000 car! But as he explained, it wasn't all fun:
"I drive a Honda Civic and in America we're lazy and we don't drive stick (manual)," he said. "I had never driven manual and I had to learn on that car and it was very stressful.
"I did stall it and Matthew, the director, did threaten me that if I scratched it, I had to pay for it also, so that was very bad!"
