Mitchell will make $3.6m for his third season in 2019-2020, per multiple reports.
The Jazz also picked up the third-year option on center Tony Bradley's contract.
Mitchell, 22, led all rookies last season in scoring at 20.5 points per game and total points (1,616), while also setting an NBA record with 187 3-pointers made by a rookie.
He won the Slam Dunk Contest and averaged 24.4 points in 11 playoff games.
Utah can exercise another option in Mitchell's rookie deal - $5.2m for the 2020-21 season - next year.
Bradley, 20, played in just nine games with the Jazz last season. He averaged less than a point in 3.2 minutes per game.
