'Mongolian Warrior' Choi landed the £32,000 cheque and title of featherweight Prizefighter champion after a destructive performance at York Hall on Saturday night.
The 40-year-old Choi, a beaten semi-finalist in the super-featherweight division last year, belied his advancing years with three eye-catching victories to scoop the prize.
After knocking out Lee Glover in the quarter-finals, Choi battled past George Jupp in the semis before easing past Manchester's Rhys Roberts on the scorecards 30-27 in the final.
Roberts produced two slick performances to reach the final, however he was simply blown away by the power of his veteran opponent in the final.
Battle
Choi laid down an early marker with a sizzling stoppage victory over the previously unbeaten Glover in the opening fight of the night.
The Mongolian put Glover on the floor in the opening round and another huge right hand over the top ended the contest just over one minute into the second.
The second quarter-final saw 'Saint' Jupp progress after a clash of heads left opponent Lee Jennings with a deep cut above his eye. The referee had no option but to stop the bout midway through the second round.
The other two quarter-finals went to the scorecards, 'Pure Silk' Roberts overcoming Ian Bailey and Coventry's Troy James winning the battle of the Midlands with a narrow points victory over Nottingham fighter Barrington Brown.
Choi was given his toughest test in the semi-finals when Jupp tested his chin on more than one occasion, however Roberts, who defeated James in the semis, posed no threat at all in the final.
Speaking after picking up the trophy, Choi told
