The Australian jetted in from Down Under to cover for Breeders' Cup-bound Frankie Dettori on the son of Dubai Destination, who showed a fine turn of foot to settle the Group One contest.
The 11/4 favourite was always well placed over the straight mile as River Proud and City Leader dominated the early running, with the latter still the one to catch two furlongs out.
But McEvoy cruised upsides on the chestnut and, despite edging right, quickened up in style to put the result beyond doubt in a matter of strides.
Outsider Feared In Flight (66/1) gave vain chase but Ibn Khaldun was three lengths clear at the line with City Leader (8/1) staying on well to deprive Feared In Flight of second place.
"We'll take him back to Dubai now," said winning trainer Saeed Bin Suroor. "It's great to win a Group One with him.
"We'll have a chat with Sheikh Mohammed to see what he wants to do next year."
Jamie Spencer extended his lead over Seb Sanders in the jockeys' title race to five after guiding Floristry to a comfortable victory in the six furlong Coral Trophy.
Spencer switched the 6-4 favourite off at the rear of the field but when he asked her for an effort she coasted round the field to beat Godolphin's Fateh Field by an easy length and a half.
"She is a good filly and she quickened up well," he said.
"I tried to get cover for as long as possible as it is windy and she has gone and won well.
"It is a shame she has come good so late in the season as she would have done well in the top fillies' races during the summer."
