Appiah is available on a free transfer and PAOK are hoping to lure the 30-year-old to Greece.
The former Juventus man spent last season at Cesena, but left following the expiration of his contract.
A number of clubs are believed to have expressed an interest in signing the all-action midfielder, but PAOK are leading the chase for his signature.
