Andre Schuerrle set Mainz on their way with the opening goal after 27 minutes when he converted from a corner.
Schuerrle turned from scorer to provider for the second goal when he flicked the ball for Nikolce Noveski to score from close-range on 54 minutes.
Mainz made the game safe four minutes from time when Sami Allagui came off the bench to chip home.
The win moves Mainz to within four points of Dortmund, while the defeat was Nurnberg's third loss on the trot to leave them in 10th spot.
