The 24-year-old made only three appearances for The Sky Blues and he has been allowed to leave on a free transfer.
Bischoff has signed a four-and-a-half year deal with Brondby after successfully passing a medical.
"I am delighted to be back in Denmark and Brondby suits me perfectly," Bischoff told the club's official website.
"The first half of Brondby's season has been marred by several injuries and sporting disappointments, so I'm looking forward to helping Brondby return to the top of the SAS-Ligaen, which is where the club belongs."
