Schalke had also been in decent form going into the match and they took an early lead when Heiko Westermann struck in the 9th minute.
Grafite equalised from the penalty spot on 26 minutes after being fouled by Mladen Krstajic.
Bosnia-Herzegovina international Edin Dzeko fired Wolfsburg into a 2-1 lead on the stroke of half-time and Grafite then made it 3-1 with his second goal of the evening after 74 minutes.
Jermaine Jones reduced Schalke's arrears two minutes later, only for Grafite to complete a stunning hat-trick in the 84th minute.
Kevin Kuranyi set up a nervous finale with the seventh goal of a thrilling contest but Wolfsburg held firm to secure the win.
The result takes Wolfsburg up to second and just one point behind Hertha Berlin, while Schalke remain eighth.
